Orecchiette are one of the symbols of Puglia, a pasta that gathers within itself the form and substance of the art of craftsmanship. A variant is the one with an intense and rustic flavor given by the "burnt" wheat, that is the wheat that in the peasant culture remained on the ground after the harvest and the burning of the tows, now obtained with the roasting method.
